Position Overview:

As a Senior Sous Chef with a strong background in sushi and raw bar preparation , you will be a key leader in our kitchen, supporting the Head Chef in all aspects of culinary operations. You'll play an essential role in delivering high-quality, consistent MediterrAsian dishes—particularly those with a sushi and Japanese-inspired focus—while mentoring the culinary team. This position is ideal for an experienced and creative chef who thrives in a high-energy environment and brings both precision and innovation to the art of sushi.

Responsibilities:

  • Lead and Inspire: Support the Head Chef in managing the kitchen team, fostering a culture of collaboration, innovation, and excellence.
  • Sushi & Raw Bar Execution: Oversee the preparation, presentation, and quality of sushi and sashimi offerings, ensuring authenticity, balance, and visual appeal.
  • Execute Exceptional Dishes: Contribute to the broader MediterrAsian menu with a particular emphasis on raw and seafood-driven items.
  • Manage Kitchen Operations: Supervise daily prep, service execution, and plating, ensuring operational flow and consistency across all stations.
  • Train & Develop Staff: Mentor junior chefs and sushi cooks in proper knife techniques, rice handling, seafood breakdown, and hygiene best practices.
  • Monitor Quality & Standards: Ensure all dishes meet Queen’s Harbour's exacting standards of quality, taste, freshness, and presentation.
  • Inventory & Cost Control: Support inventory management, ordering of sushi-grade ingredients, waste reduction, and cost efficiencies.
  • Ensure Compliance: Uphold and enforce food safety, sanitation, and allergen protocols, especially for raw product handling.
  • Collaborate on Menu Development: Work closely with the Head Chef to innovate and evolve sushi offerings in line with seasonal inspiration and the restaurant’s identity.
  • Problem-Solve Under Pressure: Remain cool, decisive, and solution-focused during peak service periods.

Qualifications:

  • 5+ years of culinary experience with a focus on sushi, Japanese cuisine, or raw bar operations .
  • Proven leadership experience in a high-volume, quality-driven restaurant setting.
  • Culinary diploma or certification preferred.
  • Advanced knife skills and in-depth knowledge of sushi techniques and seafood handling.
  • Strong grasp of food safety regulations, especially related to raw food.
  • Passionate leader and team mentor with the ability to inspire and develop others.
  • Calm, organized, and effective in fast-paced environments.
